I have always been passionate about stories and traditions surrounding Italian regional cuisine. Since I was a child I have travelled across my country from North to South, exploring and soaking in local flavours and culture as an essential part of my Italian heritage.
Thanks to widespread emigration in the past century, Italian cuisine became popular everywhere. This inevitably led to a trivialisation of Italian food, reducing the incredible variety of one of the richest cuisine in the world to a handful of stereotyped dishes that are sometimes far from the real thing.
One of the aims of my cooking is to combine modern and elegant Italian fine dining with the true meaning and taste of authentic recipes, recreating the same stories and flavours around this amazing and unique cuisine.
