I have always been passionate about stories and traditions surrounding Italian regional cuisine. Since I was a child I have travelled across my country from North to South, exploring and soaking in local flavours and culture as an essential part of my heritage.

The global popularity of Italian food led to an inevitable trivialisation, reducing the huge variety of one of the richest cuisine in the world to a handful of stereotyped dishes that are often far from the real thing.

One of the aims of my cooking is to combine modern and elegant Italian fine dining with the true meaning and essence of authentic recipes. My cuisine is simple and not overly elaborate, always allowing to grasp the quality of the ingredients. I do not believe in surprising with food just for the sake of aesthetics. I want my food to be tasty and beautiful but also healthy and nutritious.
